If you want to mount the pointing device on a gimbal, that would make Bob’s suggestion by far the simplest, you could even get away with a couple of potentiometers!

Then like the other methods this line could be extrapolated out to the screen

I would hazard a guess that it would require a custom model with the final display on the screen or using unsightly landmarks at each corner OpenCV: Camera Calibration
The device also ought to be handled by the public - there might be some relatively expensive parts in there
Not sure off the top of my head, an IR sensor ought to provide some specs as to the wavelength it will detect, i.e. the 38KHz board will operate around 950nm
