I am wanting to read a few VDO 12V automotive sensors - temp and pressure etc. They are resistance based ~ 0-190ohm. It looks like the circuit is pretty simple, however is there a single/multi channel board that would provide voltage protection, level converting etc ? Thanks in advance

Is the board you are referring to part of the sensor or something you are trying to locate which doesn’t come with the VDO sensors?
Can you give us a link to any resources you have so we can get up to speed with what you are trying to accomplish here?
