I would like to use a stepper motor ( as powerful as possible) to be controlled using an Adafruit Motor Shield v2.3. Can anybody recommend one?

The Adafruit Motor Shield has a TB6612FNG on it, which is rated to 1.2Amp per channel.
You should be fine with any of the 1A to 1.2A steppers listed here:
