These displays use an SPI connection, which means you’ll have to use the CS pins on the displays to choose which one to talk to at any given moment. I’m not sure about the internals of the Adafruit GFX library, but I think that means you can simply write to one display at a time, and if you do it quick enough, it’ll seem like the two displays are the same.
