That is excellent thinking and a must for reliability. After all if the controller fails you can do nothing about shutting things down. Limit switches and interlocks should always be divorced from any electronic control otherwise the whole reason for having these safety measures falls down.
You will have to think carefully about this. Refer to Jeff’s quote:

Not so much high revs but high throttle setting. Should you shift into neutral under high throttle settings THEN you would have high revs. Probably catch the pistons and engine bits on the way down.
But your interlock on the throttle lever cutting servo power should prevent or minimise that risk.
