Hi Valentin,

Most likely not, unless the E ink display can handle HDMI input. Most of our E ink displays are hats for the pi: https://core-electronics.com.au/pimoroni-black-white-inky-what-epaper-eink-epd.html

Do you know of any decoder breakout board that would do HDMI to a eInk SPI connector?

Unfortunately not. Due to the way E ink displays work they cannot handle the way a typical HDMI monitor can display, this is due to the extremely slow refresh rate.
