Looking for a case that’ll take a Pi5 with the Camera 3 NoIR. Is there such a thing?

Not as far as far as I can tell, certainly nothing official.
The closest thing would be this case for a Pi 4 plus Camera on printables.com.
You would have to modify the printable for the Pi 5, most particularly inverting the placement of the Ethernet and USB ports on the board, but it would be doable.
