I personally like using standoffs for mounting components. Most boards come with predrilled holes that allow for stacking or mounting using standoffs, and having easily adjustable clearances between the components makes changing wiring a little less fiddly once everything is put together.

For a general-purpose kit that is closer to the Meccano style of construction, I would have a look at this set:
