Thermocouple

Hi Core team.

I am looking at Arduino for a temperature project using thermocouple to measure the cylinder head temperature of my 4wd , among others (gearbox, transfer case, etc).
I am looking at the Adafruit amplifier.

How, or what, do I attach the thermocouple to an appropriate bolt. Do you crimp an appropriate eyelet to the thermocouple?

Can the 5m thermocouple be cut to the length I require myself?
