I want to buy the adafruit 3v submersible water pump and make up a very simple circuit (pump + battery + on/off switch).
I’d like to power it with a lipo battery. Can i use a 3.7v lipo, or is voltage going to be too high for the pump? If that battery isn’t suitable, what would be a suitable option?

No that likely won’t be an issue, it’s quite a minor difference, although if you’re worried about it, you can use this one instead. Also, when using LiPo be sure not to draw too much current and that they don’t overdischarge (they have protections built in, but best to double check the ratings) All the best with your project!
