Welcome to the forum!!
In short, they are exposed but to use them you’ll have to disable WiFi.
Since this devboard uses the base ESP32 module (not an S2, S3, C3 ect) ADC2 and WiFi share a connection so only one can be used at the same time.
You’ll be able to use a softI2C or SPI external ADC though! Analog to Digital - Breakouts & Modules Australia

Any information on the connectors used on the Extended I/O Interface? Seem to skip over this detail on the datasheet.
In fact, part numbers for all the connectors would be useful.

The larger connectors are referenced as MX1.25-XP in the datasheet, whereby X is the count of pins. Eg, MX1.25-7P (more info on the last page on the datasheet).
