I’d say so! While Waveshare doesn’t explicitly say so on the product page, the test points that matter (5V, GND, D+, D-) haven’t moved between the Zero 1 and 2, so you should be fine:

looking at the product page under compatibility it looks like the POE hat is compatible with the Raspberry PI Zero 2W.
As observed by James back in Feb 2022 the test points have not moved between the Zero 1 and 2

Looks like Bailey has figured this one out for you.
The final setup will look a little different than the product photos if you use a Pi Zero 2W but should work just the same.
